I've used Riseup.Net (https://riseup.net/en/about-us) for personal email,
mailing lists, public/private wiki, and some shared document creation for a
very long time and worked with the founders a bit. I donated a class C IPv4
subnet to them at one point which is used for their VPN, and they speak Tor
as well -- serious folks.

I forget which of the common open-source mailing-list softwares they are
running but I bet I have a dead list or two over there and could check.
