I think riseup.net is an excellent idea for email/lists.
If you’re looking for other possibilities, there’s a great movement IT cooperative called MayFirst that I’ve used for 20 years. For ~$200/year you get unlimited email accounts, email lists, cloud storage, web hosting, mount points, etc.
"May First Movement Technology is a non-profit membership organization that engages in building movements by advancing the strategic use and collective control of technology for local struggles, global transformation, and emancipation without borders.”
Both of these organizations have put a lot of thought into ease of use, the data security valued by activists, and there’s careful consideration of how to respond to law enforcement demands for information, etc.
